Le nez de ce rhum blanc est tout ce qu’il y a de plus authentique et sans concession. Il peut paraître rude et très sec au premier abord et aura besoin d’un peu d’air. Le terroir s’exprime véritablement ici, avec un côté terreux, voire poussiéreux, et puis des notes de bagasse et de paille. Les notes de fermentation nous orientent sur un côté végétal presque légume, on pense au chou vert. Ce rhum a capturé le cœur des fibres de la canne qui semblent renfermer un jus poivré. On repense un instant à l’arôme doux mais puissant de la côte de chou, avant que le rhum ne s’ouvre sur les agrumes.

The nose of this white rum is the most authentic and uncompromising. It may look rough and very dry at first and will need some air. The terroir is truly expressed here, with an earthy, even dusty side, and then notes of bagasse and straw. The fermentation notes point us to a vegetal side almost vegetable, we think of green cabbage. This rum has captured the heart of the cane fibers that appear to contain a peppery juice. We think for a moment of the sweet but powerful aroma of the cabbage rib, before the rum opens on the citrus fruits.

De neus van deze witte rum is de meest authentieke en compromisloze. Het ziet er in het begin ruw en erg droog uit en heeft wat lucht nodig. Het terroir wordt hier echt uitgedrukt, met een aardse, zelfs stoffige kant, en dan noten van bagasse en stro. De fermentatienoten wijzen ons bijna plantaardig naar een plantaardige kant, we denken aan groene kool. Deze rum heeft het hart van de rietvezels gevangen die een peperig sap lijken te bevatten. We denken even aan het zoete maar krachtige aroma van de koolrib, voordat de rum op de citrusvruchten opent.
